Recipe:

Croutons
– 8 slices of a baguette.
– 2 Tbsp olive oil
– salt Maldon

Walnut Caramel
– 30g / 1oz of walnuts, toasted
– 150g / 5.2oz of sugar

Cream
– 50g / 2oz of blue cheese
– 300ml / 1.2 cups of double cream

Pickled Celery
– 75ml / 2.5oz of white wine vinegar
– 30ml / 1oz of white wine
– 2 celery sticks
– 30g / 1oz of sugar

To Serve
– 2 heads of baby gem lettuce, leaves separated
– 20g / 0.7oz of walnuts, toasted
– 10 sultanas raisins
– 1 Granny Smith apple, diced

  4. Hi James, we made this tonight, kinda, a large platter, we didn't bother with peeling the celery and used chestnuts instead of walnuts cause we didn't have any but we were roughly there and it was lovely, thanks for the recipe! (even if we bastardised it)
