Can you help me understand the logic behind soaking potatoes to get rid of starch and keep them from getting soggy, but then coating them in another kind of starch? Thank you!
I have never used coconut oil in fries. What difference does it make?
Would all purpose flour work in place of cornstarch??

I do just about the same steps for my white potato fries
was she trying to sound geeky purposely?
I think I’d make sweet potato wedges lol flipping all those skinny sticks would take forever
Another tip would be to place them on metal racks so cooking is even all around the fry and you don't have to flip them over 🙂 Thanks

Are they going to come out bad if I don’t add cornstarch?
They came out decent – not great, but good for healthy fries – but it was soooo time consuming having to bake two pans separately w/ 15 mins to turn them on each. Between the cutting, drying, soaking, drying, tossing and baking, it’s taken 3 hours and I couldn’t just walk away. I’ll be changing this up. Also, don’t use aluminum foil, use parchment paper. They stuck like crazy to the foul despite spraying w/oil
