  2. Im not gonna lie, but the lettuce egg roll is much easier if you transfer the lettuce omelette to a plate, roll it after it cools then add it to the yolk omelette
    Edit :the brown sauce is oyster sauce

  4. I love steamed eggs! Never had them with soy and sesame oil so now I have to try that! If you haven't had cooked lettuce, try iceberg lettuce rough chopped, throw it in a hot pan with some bacon fat, don't cook it too long, then add some soy sauce, or better yet, some hoisin, and finish cooking the lettuce in the steam. Try leaving the lettuce a bit more raw, or cooking it more, but the more you cook it, the more water will come out of it. It's delicious 😀 They say cooked lettuce, like when you put lettuce in broth, helps you sleep better. I Just think it tastes good 😀

  5. Do that wrap with spinach and put a lid on it so it wilts better; and put some munster in there between the layers, maybe some mushrooms if you're feeling like a champ. Then cover it in white breakfast sausage gravy.

  7. maybe slice the avocado and put it on top of the egg salad. Better presentation, and provides at least a little more texture.

  12. My Taiwanese Mom always used chicken broth and soy sauce in her steamed eggs plus a pinch of msg She served it with rice.and we added sesame oil, hot sauce or extra soy sauce to the bowl. Also we put soy sauce in scrambled eggs mixture then quickly cooked and served rice on the side. Thanks for embracing my childhood comfort food.

  13. A lot going on in there? One of my favorite parts of the egg salad sandwich is it’s simplicity. Eggs, paprika, mayo. Salt, cream of tartar and pickled juice on fresh white bread.

The soy marinated egg yolks, and even more so your soy+mirin marinated egg yolks, are cousins in my mind to Tamagoyaki, which uses far less soy and mirin, more mirin than soy, and sugar and salt (per Makiko Itoh's recipe on her site Just Hungry), and the mixture is then scrambled and cooked, whites retained. When I do that I just make scrambled eggs because it's much faster and the added flavors are of course still there.

  15. My mom would mix in a bowl 50/50 peeled, ground tomatoes and eggs. I made it myself with puree and tomato sauce but fresh tomatoes is a lot better. You fill a pan with this mixture and keep stirring while heating, not giving it a chance to form a solid pancake. You end up with a pan full of pink crumbs. Depending on temps it can be a fine grain to small popcorn size pieces. Mom always got the popcorn sized ones, I never managed. Keep it moist, don't cook till it's dry! Add some pepper & salt, maybe some chives, great on toast. Loved it as a kid and now for nostalgia reasons, but also still tasty. Can be eaten still warm or cold.

  16. Great content. Does anyone know what was the 2nd liquid other than the soy sauce that she adds to the egg yolks in the "Soy Cured Egg Yolk" recipe? I couldn't understand what they said.

  17. Lovely to have electricity 24/7. Here in South Africa we have this phenomena called load shedding, where the government are basically fucking the country up. Anyhows, I have quail, the easiest cage kept birds for eggs, manure, food and ambiance without having to contain chickens and their horrible habits. 20 quail can be happy with a few square metres of cage and dont make a noise if the sex ratio is correct. If you have the space, go with chickens, just saying quail is very practical for small properties.

  18. Regarding the Soy Cured Egg Yolk, could you re-use the soy sauce/mirin bath once you finish all the yolks, by simply adding some new yolks?
