  3. Today I made grapefruit bars following this recipe. They were delicious, but needed a bit more tartness. When I do it again I might use 1TBS of lemon juice to replace that much grapefruit….or a 1/4tsp of vitamin C crystals. I wouldn't want to mess with the juice:sugar ratio which was just right!

  6. YOU ARE A GENIUS!!!! THIS SOOOOOOOO GOOD!!!! I know you said you can't mess up but I did. The dough wasn't enough to spread so I made another batch (which was cool with me) and baked it for 40 minutes instead of 22. (I did 40 instead of 44 because I didn't want to over bake it) I followed everything else. I love it!! Thank you.

  9. Mine are sitting in the fridge overnight right now! I didn’t have the kewl pastry blowtorch though, so I had to use a bbq lighter…my fingers hurt from holding it down lol

  12. I’ve been making these lemon bars for the past five years. I’ve also switched out the lemon for lime and used just the crust recipe to make cookies! My family really loves them every time.

  13. these lemon bars are awesome & at least one definition of docking may be considered MORE offensive than pricking lol

My only recommendation to improve this is to strain the lemon custard before mixing in the zest and pouring it over the crust, it gets rid of those little white bits attached to the egg yolks and almost everything else that won't emulsify properly and makes the texture extra creamy, I do it whenever I make Krusteaz Meyer lemon bar mix and it works very well for those.

  15. ahahahahahahaha — Good Job — Using a ziplock bag as an icer — sounds like something my redneck self would do — ahahahaha – but HEY – what would need to be done to add an amount of graham cracker to the dough – and the juice of another lemon – so I don't have to experiment so many times – I always need a little more – in my pucker — hehehehehe

  19. Tried them. WOW… turned out great. I did not add zest because my fresh lemon juice was pulpy (I know, different taste signatures, but that was my reasoning). I only had a 9×9 pan, they were a bit thinner but in a good way. Did not do the meringue. Wish I would have baked them a few minutes longer. These are excellent.

  21. Looks very good , but can you substitute the butter for margarin , because that’s a lot of butter and it is bad for the heart & cholesterol. 😊
