  7. User feedback on this recipe: I attempted this recipe twice, the first time was a bust. I think my mistake was using dried thyme instead of fresh thyme, & the dried version was a bit dated too. The thyme flavor was unpleasant & basically ruined the dish. During my 2nd try, I modified the recipe slightly. I basted the pork chops with some butter & rosemary while it was searing in the pan. I also used a bit of red wine to deglaze (in addition to the figs & balsamic vinegar). I left out the thyme altogether. My 2nd try turned out really well, & I think this will be my go-to recipe for European-style pork chops from now on. Thanks!
