Made this , we tried it out not bad , but drizzled with a balsamic reduction lifted the game , and final result looked amazing , it is now on the menu 🙂
Perfect meal…try it with Tarragon Vinegar sometime! Tarragon goes great in beet salads. I usually use walnuts and always use goat cheese b/c I prefer it. Love your roasting technique. Try wrapping smaller beets in foil sometimes with orange juice/honey/fresh herbs. I can't believe that huge beet came out tender so fast, I have a hard time w/ large tough beets!
