Tomato Crostini with Whipped Feta
RECIPE COURTESY OF INA GARTEN
Level: Easy
Total: 40 min
Prep: 30 min
Inactive: 10 min
Yield: 6 to 8 servings
Ingredients
6 ounces good feta, crumbled
2 ounces cream cheese, at room temperature
2/3 cup good olive oil, divided
2 tablespoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
2 tablespoons minced shallots (2 shallots)
2 teaspoons minced garlic (2 cloves)
2 tablespoons good red wine vinegar
2 pounds ripe heirloom or cherry tomatoes, 1/2-inch-diced
3 tablespoons julienned fresh basil leaves, plus extra for serving
20 to 25 (1/2-inch-thick) diagonal baguette slices, toasted
2 tablespoons toasted pine nuts
Directions
For the whipped feta, place the feta and cream cheese in the bowl of a food processor fitted with the steel blade. Pulse until the cheeses are mixed. Add 1/3 cup of the olive oil, the lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper and process until smooth.
For the tomatoes, up to an hour before you’re serving, combine the shallots, garlic, and vinegar in a medium bowl. Set aside for 5 minutes. Whisk in the remaining 1/3 cup olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper. Add the tomatoes, stir gently, and set aside for 10 minutes. Stir in the basil and taste for seasonings.
To assemble the crostini, spread each slice of bread with a generous amount of whipped feta. With a slotted spoon, place the tomatoes on top. Put the crostini on plates and scatter with the pine nuts. Sprinkle with extra basil and serve.

This woman's devotion to her husband is incredible. I mean, I feel like she was born to please him
Absolutely stunning! Looks yummy and fresh. Added bonus: sharing with Jeffrey 😀
Where did she get those tomatoes? I don’t think she mentioned it.
Just made this tonight for dinner because I happened to have all the ingredients on hand. So. Good. 10/10 would recommend.
Divine!
I miss her show ….a brunette Martha Stewart
She went from the White House to a Hamptons House
I love Ina and Jeffery together, they’re so adorable together… Oh yeah, that Feta Cheese Whip and Tomato Crostini looks so delicious!
Beautiful!!
I bet that’s delicious 😋 Perfect for Summer.
Ina's my favorite. The Food Network needs to show more of her and less if Guy Fieri.
Can’t believe her husband isn’t obese having a wife that cooks SO well 👏🏼
Soooooo YUMMY 🤤
If you can’t find butter 🧈 made from the tears of Dutch Milk Maids, store bought is fine.
Maybe toast the pine nuts a little?
Only Ina can make bread and a few great ingredients a gourmet snack. Jeffrey knows he’s a lucky man❤️

Oh MY!!! Welcome, again, to summer in Northern CA. How lucky are we to have you here. This strikes me as a very simple dish; however, looks to die for!!! Tomatoes are perfect right now. I love feta and I’ve been wonder what else to do with all of the basil I have. I even think my grandson, who eats the tomatoes 🍅 right off of the vine, will like this. Yummmm.
Good lord. Absolutely delicious.
my heart
Good ideas for healthy average families. Good to add with other food dishes. Good to enjoy other positive cultures. Good for a party
