Ingredients for the High Protein Chickpea Salad:
-1 cup (255 gr) cooked chickpeas
-a big bunch of green leaves
-1/2 cup (70 gr) olives
-1/2 red onion
-a block (300 gr)
firm tofu
-olive oil
Dressing:
-1 tbsp
peanut butter
-1/2 tbsp
soy sauce
-1/2 tbsp
olive oil
-a few drops
of lemon juice
-2 tbsp
water

Ingredients for the Mediterranean Chickpea Salad:
-1 cup (255 gr)
cooked chickpeas
-4 medium/small
tomatoes
-1/2 cup (70 gr)
olives
-2 medium
carrots
-1/2 cucumber
-1/2 red pepper
-1/2 red onion
-olive oil
-a pinch
of salt
-black
pepper
-parsley
