Ingredients:
1 Pita Bread Cut into Cubes
1 Eggplant Cut into Cubes
1 Potato Cut into Cubes
1 Tsp Olive Oil
4 Cloves Garlic Crushed (Salted)
1 Crushed Tomato
1 Tsp Tomato Paste
Pepper, Cumin and Coriander (To Taste)

Yogurt Sauce:
2 Cups Yogurt
4 Cloves Garlic Crushed
1 Tbsp Lemon Juice
2 Tbsp Tahini
1 Tsp Salt

Garnish:
Fried Pine Nuts
Fresh Chopped Cilantro
Pomegranate Seeds

  1. What type of vegan yogurt do you recommend? There are the ones made out of cultured coconut, or cultured almond, or soy. I think I've seen cashew-based yogurts too, if I remember correctly. If you're just using cow's yogurt, then this is a lacto-vegetarian or lacto-ovo vegetarian dish, not a vegan dish.
