Let’s just say I’m convinced that “en papillote” (or “in paper”) has become one of my favorite ways to do weeknight dinners. It’s a French cooking technique where a combination of fish and veggies are folded into a parchment paper pouch, then perfectly steamed in the oven.

This Mediterranean recipe hits the spot with simple and fresh coastal flavors while ensuring you have four all-in-one meals done at the same time. Love it!

  5. I am eating this as I write – made it with halibut, cherry tomatoes, sugar snap peas, spinach and olives. Made couscous on the side with a glass of wine. Life is good!

  7. Looks so good. I too was born in Auckland and moved to Australia when 15.
    I have been revisiting your videos as I am on a serious wellness journey. I have arthritis, a fatty liver, am gluten and dairy free due to intolerances and trying to eat healthier. I have lost18 kilos in the last year (yes am proud and not bad for a over 60+ female) reduced my cholesterol (omg it’s now normal) and liver has improved.
    I have depression, anxiety and PTSD so meal prep and batch cook soi always have good food in the freezer.
    Sorry about the essay I eagerly watch for new videos hoping I can give them a try. Thank you for your hard work it’s really appreciated.

  13. I have used banana leafs instead paper. The banana leaf gives the fish (or chicken) an exquisite taste.
