Fried egg sandwiches are a great comfort food for anytime of day or night. You can use any type of bread you choose, either toasted or not, and you can add cheese and/or fried bologna to make this classic sandwich even better. Fried egg sandwiches can be made in a skillet or flattop griddle and served alone or with a side of fruit or potatoes.

Shopping List:
Large eggs
Your choice of bread like white bread, Texas Toast or hamburger buns.
Butter
Salt and pepper
American cheese slices (optional)
Fried Bologna (optional)

Directions:
In a skillet or a flattop griddle, add butter and toast the type of bread or buns you choose. Add mayo or your favorite condiment and set aside.
Add more butter and fry the eggs free form or in egg rings. Break the yolk and season to taste with salt and pepper. Cook until the whites and yolk are thoroughly cooked through.
If using, fry the bologna and add the cheese.
Build your sandwich and enjoy.
