Chef Frank shares essential tips for preparing authentic Maryland Style Lump Crab Cakes.

INGREDIENTS
1 pound lump crab meat
1 1/2 c. mayo
1/4 plain bread crumbs
1 TBSP Old Bay
2 tsp yellow mustard
2 tsp Worcestershire
1 egg
2 TBSP freshly minced parsley
1TBSP lemon juice

Crab Mix
Combine 1 1/2 cups mayo, 1 TBSP FRESH lemon juice.
1 TBSP Worcestershire sauce, 1 egg, 2 tsp yellow mustard,
1 TBSP Old Bay.

Crab meat prep
1. Drain crab, remove moisture by gently squeezing the crab meat.
2. Add 1/4 bread crumbs, 2 TBSP fresh minced parsley,
3. Add 1 cup of crab mix 1/2 cup first to make sure they don’t get 2 wet.
4. Combine gently with YOUR HANDS, try to keep your lumps in tact.
5. Form crab cakes by gently rolling and tossing the crab meat with your hand.
6. Sprinkle lightly with paprika and top with a dab of butter.
7. Bake at 375 for 12-15 minutes.

  4. Thank you so much. I lived in DC for over 30 years, and now I'm in Charlotte NC to find a decent crab cake is impossible. There is a sister here in Charlotte with a carry out called LuLu's. Crab cakes are $18.00 (NO OLD BAY ) she calls it Maryland. People have do not know a Rrel Crab Cake. Thank you and may Jesus continues to bless you

  7. I made these, they were excellent but I had wayyyy toooooo much crab mix. I used the exact measurements. Do you use all the crab mix?? I probably used only half of it.

  8. I'm not from Maryland but it's the best crabcake I've ever tried and my husband's family is from the DMV so whenever they ask for it I try to stay as true to the recipe as I possibly can… you're right about the old bay haha can't call it Maryland style without it!

  10. Baltimorean here! The only thing I do differently is I use heavy whipping cream instead of mayo and I broil mine.

  18. Maryland Governor J. Millard Tawes, a Crisfield Md. native and resident, had the pleasure of eating crab cakes prepared by his wife, Helen Avalynne Gibson Tawes. Her recipe was so loved, it became the official recipe for crab cakes served at the Governors House or as some know it, the Governors Mansion. Her recipe is
    1 lb. crab meat 1/4 tsp. pepper

    2 eggs, beaten 1 tbsp. chopped parsley
    2 tbsp. mayonnaise Dash of Tabasco sauce
    1 tbsp. mustard Crushed saltine cracker crumbs
    1/4 tsp. salt
    She did not use Old Bay. I love old bay on steamed crabs and steamed shrimp but find it unnecessary for crab cakes.

This is a perfect Maryland crab cake the only thing that I would do different is instead of paprika at the end I would use a little more Old Bay which is mostly paprika anyway and best of all you can never have too much Old Bay if you're from the Chesapeake Bay area .
