– 3 long stems of fresh mint leaves
– 4 cucumbers
– 3 scallions
– 5 radishes
– 2 large tomatoes
– 1/4 orange pepper
– 1 cup shredded cabbage
(1/2 white, 1/2 red)
Zesty Lemon Vinaigrette Dressing:
– 5 garlic cloves
– 3/4 to 1 tsp salt
– 1/4 cup fresh lemon juice
– 2 tbsp Pomegranate Molasses
(Optional)
– 1/2 tsp Black Pepper
– 1 1/2 tbsp sumac
– 1/2 cup Extra Virgin Olive Oil
1 pita bread
Lemon slices for decoration

Fabulous! even without mint 🙁 didn't realize my mint died while I was out of town. I also did not use the pita, on a low carb diet in January – paired with baked chicken along with baked onions and lemons
