麵團 Dough :
無鹽牛油 Unsalted butter 30g
中筋麵粉 All-purpose flour 150g
鹽 Salt 2g
砂糖 Sugar 3g
清水 Water 60ml
無鹽牛油 Unsalted butter 80g (for filling)
蛋漿 Egg mixture:
全蛋 Whole egg 20g
蛋黃 Egg yolk 2
砂糖 Sugar 45g
淡忌廉 Whipping Cream 150ml
鮮奶 Milk 75ml
▼步驟 Instructions
1. 冷藏牛油切塊平均放於牛油紙,平均擀至約3mm厚
2. 麵團所有材料混合成團,冷藏30分鐘。
3. 在麵團一半位置放上牛油,對摺,冷藏30分鐘。
4. 取出麵團後,擀成長方形,兩邊往中間摺上,再對摺,冷藏30分鐘。
5. 取出麵團,重複剛才的步驟。
6. 取出麵團後,擀成長方形,約3mm厚,從較窄的一邊捲起,冷藏30分鐘。
7. 預備蛋漿,將所有材料加入後攪拌,保鮮紙貼面,冷藏約半小時至所有砂糖溶化。
8. 取出麵團,每個切成幾2cm厚,約12份量。放入蛋撻模具,壓至高於模具約1cm,急凍10分鐘。
9. 在烤盤上塗上錫紙,蛋漿倒入模具約八成後,210度中層焗23-25分鐘。

Thxs for this recipe, i made it today and taste delicious! My issue is with my oven, the temperature didn't get as therefore formed a soggy bottom. In the end i flipped them over and cooked longer in the oven. I added lemon zest and vanilla just like what portuguese would do. Worth the effort, will try again!
