Beet salad Moroccan easy recipe, vegan gluten free, Mediterranean

This beet salad was a winner when we had the restaurant.
You can freeze it up to a month and sometimes when I make large quantities, I would divide it into containers and always have one available.
It is gluten-free, dairy-free, vegan, and has no sugar added to it.
