BAKED BLUEBERRY LEMON OATMEAL CUP RECIPE
3 cups rolled oats
1/2 teaspoon kosher salt
1 teaspoon baking powder
1 cup unsweetened vanilla almond milk
1 cup plain greek yogurt (or apple sauce)*
2 pastured eggs, beaten
2 teaspoon lemon zest
1 tablespoon lemon juice
1/4 + 2 tablespoons monk fruit**
3/4 cup blueberries
1/4 cup sliced almonds

Preheat over to 350 degrees F.

Spray a 12-cup muffin tin with cooking spray or coat with coconut oil or butter to ensure nothing sticks.

In a large bowl combine oats, salt and baking powder and gently toss together.

Next, mix in milk, greek yogurt, eggs, lemon zest, lemon juice and monk fruit and stir together until everything is incorporated and you have a rich, thick batter.

Add in the blueberries and almonds and stir until just combined.

Evenly divide the oat mixture between all 12 muffin cups and pop in the oven for 25-30 minutes or until the muffins are set through and lightly golden brown on the top.

Cool completely before removing muffins from the pan and enjoy!

I like to store these muffins in an airtight container in the fridge where they will happily last up to one week.

To reheat the muffins, you can slice them in half and place them in the toaster oven or pop them in the microwave for 20-40 seconds.

*You can sub in applesauce or mashed banana for the milk dairy, if you want to keep the oat cups gluten free.

**Monk fruit is a plant-derived, calorie free sweetener. This is the one I am using. If you prefer, you can sub in coconut sugar (or really any granted sugar) in it’s place.

  1. ❤️ your recipes but if you really want clean eating then all ingredients need to be organic which is so easy to do. Glyphosate is a huge contaminate in oatmeal, lemon, blueberries etc. which is why organic is so important. Bob’s Red Mill is available in almost every grocery store. I was naïve until I got the C diagnosis and have since really cleaned up my diet. Just made your pumpkin cookies and they were SO good 😊

  2. When I made these, I forgot the eggs, but they still turned out delicious. I also split the batter before I added the lemon. I made six muffins with apples and cinnamon, and the other six with the lemon and blueberries. I did add a little crumble topping, but they are delicious, hearty, and filling.

  8. Thank you for the inspiration. I understand your intent for this recipe but I just couldn't make them without a bit of fat, more sweetness, and a softer texture… so I added 2 tbsp of butter, 1/2 cup of flour, little more oat milk, a little more baking powder, 1/4 cup of desiccated coconut, 1 tsp of vanilla, 3 tbsp of xylitol, and finally a sprinkling of brown sugar on top (the only regular sugar). It is still healthy; more importantly, my wife finds them slightly more acceptable. Unfortunately, she hates "healthy foods." 🙁 No point in baking food she won't eat. What can I do? LOL

  10. OMG!!! I just made these and they are delicious! I added a touch more lemon juice cuz it was squeezed out and use 1/2 cup walnuts . That's what I had on hand. Went with applesauce and OMG… Dani… I can't tell you how good they are with the blues popping and the lemon. So soooo good

  11. HELP…I’m new to baking “clean” ~ I made these muffins to the letter as well following the video. Why do they look unbaked inside? I’m having this problem with a number of cakes but only when using “clean” ingredients!!! I need to eat foods that have no inflammatory ingredients but I’m discouraged with the results. Any advise? (It’s not the oven) thanks

  13. Feankly, this recipe was NOT what I expected at all. Very much unlike any oatmeal cakes or cookies I’ve ever had. It tasted like plain oatmeal with a bit of sourness from blueberries and lemon, I didn’t like it personally.
