Orecchiette (pronounced [orekˈkjɛtte]; singular orecchietta; from Italian orecchia ‘ear’, and -etta ‘small’). This pasta dish is typical of Apulia, a region of Southern Italy. The name stems from their shape, which resembles a small ear.

INGREDIENTS: 4-6 servings
1 lb. of Orecchiette
1 large bunch broccoli rabe, washed and 2″ trimmed off stems
1 lb. Italian sausage, removed from casing
2 tsp olive oil
5-6 cloves garlic, chopped
1/2 cup of chicken broth
1/4 cup grated Parmigiano Reggiano
¼ cup of Italian parsley
Season with salt & black pepper
crushed red pepper flakes, optional

We are on the same page, I bought 4 bunches and made 2 large stuffed loaves of seeded sausage and broccoli rabe bread, with garlic and cheese so delicious… I could eat broccoli rabe every day! Do you have to wash the rabe first before blanching ?
U guys hilarious. I'm native NYC lived in Dallas and Houston 1978-98. I remember a couple Italian markets and pizza joints. Probably way more today.Supermarkets some of the best in country. That applies too both Dallas and Houston actually Houston had larger amount Eye-talians as they say in Texas. Do they still call NY'ers Yankees ?

This is a recipe famous in Bari Italy. Broccoli Rabe is a bitter green and is in the turnip family. Some people call it turnip tops. The florets resemble broccoli, hence the name broccoli rob. I don’t blanch the greens, but add to the finished sauté then add chicken stock and cover until tender. I add the orecchiette pasta while aldente so it absorbed the yummy sauce. Cheese cheese and a little more cheese. Bon appetit
I don't pre blanch it and I do cut the bad. I actually cut them at the band. Not fond of the stems.
