Hey there everyone! Here is my recipe for a deliciously creamy mushroom risotto! This recipe serves 4-6 people and is sure to satisfy! So try it out 🙂

Ingredients
6 cups Chicken Stock (or any other stock of choice)
2 Tbsp Olive Oil
1 diced Onion
2 cloves Garlic (minced)
2 Tbsp Butter
200g Exotic Mushrooms
1/4 cup Basil
1 1/2 cup Arborio Rice
1/2 cup White Wine
1 cup Parmesan Cheese
Salt
Chives

Start off by boiling the stock. Set aside.
Add olive oil to a pan and fry the onion and garlic.
Add butter and mushrooms and allow the mushrooms to become soft.
Add the basil and Arborio rice and fry 2-3 minutes.
Add salt and white wine and allow it to be absorbed.
Start adding the hot broth 2 soup ladles at a time, stirring continuously, until the liquid is absorbed and the rice is al dente. This will take about 15-20 minutes.
Add the parmesan cheese and allow it to melt.
Serve it up with some chives, and ENJOY!
