Ingredients:
1 large Onion, chopped
2 Celery stalks, chopped
2 medium Carrots, diced
2-3 Garlic crushed, crushed
2 tablespoons Olive oil
1 teaspoon Cumin
1 teaspoon Dried oregano
1 teaspoon Paprika
Salt to taste
Pepper to taste
1 can (14oz/400g) Diced tomatoes/chopped tomatoes
8 cups (2L) Vegetable stock
2 cups (380g) Dried lentils, rinsed
2-3 tablespoons Parsley/coriander, chopped
2 tablespoons Lemon juice, fresh

Directions:
1. In a large pot heat olive oil, add chopped onion and sauté for 6-7 minutes, until slightly golden. Add chopped celery and diced carrots, cook for 4-5 minutes, until tender. Add crushed garlic, cumin, dried oregano, paprika and cook, stirring for 1 minutes.
2. Add minced/chopped tomatoes and cook for 1-2 minutes.
3. Add rinsed lentils, vegetable stock, salt and pepper. Bring to a boil over high heat, then, reduce the heat to low, cover with a lid, and simmer for 30-45 minutes. Check the seasoning and add salt/pepper if needed.
4. Add chopped coriander/parsley, lemon juice, give a quick stir and turn the heat off.
5. Serve!

  7. Can anyone tell me if the lentils are suppose to be cooked before you throw them in the soup or do they cook in the soup this is my first time ever making lentils I’ve never had it.

  8. That’s a stew, not soup! You should really consider blending at least half of it to give it a smother texture as soup should be.

  9. Thank you for the video and recipe! I made this for dinner tonight and it was fantastic!! I normally don't eat lentils and was avoiding using my little 16 oz package. I increased the ingredient portions a bit and used the celery leaves instead of parsley. It was really, really good, and I highly recommend this dish to anyone wishing for a warm, flavorful soup.   10. Thanks! This was great. Unfortunately, I only had 4 cups of vegetable stock but to make up for the other 4, I used 2 tomato + chicken bullion cubes with 2 cups of water. We also were short on Oregano so we used Herb de Province, Thyme and Basil. We even tossed in a little Mrs. Dash Chipolte flavorings. In hindsight, should have added 3 or 4 cups of water because a lot of the stock boiled away. I would just chalk it up to needing to add more water the next time. The next day it was even more flavorful. Placed some scallions and real feta cheese from Trader Joe's on top of the soup and it was so super good! Can't wait to make it again. 👍
