โœจINGREDIENTSโœจ

For the Tofu:
600g extra firm tofu
1 tbsp olive oil
Juice of 1 lemon
1.5 tbsp apple cider vinegar
1.5 tbsp nutritional yeast
1.5 tsp onion powder
3/4 tsp garlic powder
1/3 tsp dried dill
3/4 tsp oregano
1/2 tsp salt

For the Couscous
1 cup uncooked whole wheat couscous (cooked with 1.5 cups water & pinch of salt)
1 cup halved cherry tomatoes
1/2 shredded cucumber
1/4 cup kalamata olives
1/2 cup fresh chopped dill
1/4 diced red onion

For the Tzatziki ๐Ÿฅ’
250g silken tofu
1 clove garlic
1.5 tbsp lemon juice
1.5 tbsp apple cider vinegar
2 tsp dried dill
1 tsp onion powder
1/2 tsp salt
1/4 tsp pepper
1/2 grated cucumber

3 cups shredded lettuce
Lemon wedges

๐Ÿ™Œ First make the tofu marinade and add in the tofu for at least 10 minutes. Pan fry until golden.

๐Ÿ”ฅ Cook the couscous and let it cool and mix in the chopped veggies

๐Ÿ˜‹ To make the tzatziki blend all the ingredients together then mix in the grated cucumber.

๐Ÿ‘ŒAssemble your meals by dividing your ingredients into 3 containers. Add the tzatziki on top but be sure to keep it separate from the lettuce so it does not wilt.
