When you feel like you have only odds and ends, and nothing really proper to serve for dinner, consider putting everything out on plates or on one big arranged platter for either “salad bar night” or a “composed salad” – for tonight’s menu, we picked some kale from the yard, combined with some steamed quinoa, and I offered sliced oranges, a sliced tomato and onion, a can of garbanzo beans, and we were in business!

  1. I love seeing your girls, and love how the baby loves her food, she is such a good eater!…. Protein plus the makings for salad is a great menu plan! Love this combo you have here.

    In the summer we get all of our salad needs from the garden but in the winter I use the Aldi salad kits and add a protein. The kit cost is $2.49 and makes 2 main dish servings or 4 side salads and contains all the makings…. I add a protein and we call it a meal. The kits are great if you are short on time or don't have a garden.

     Aldi has a kit that has kale, some mix ins, plus a citrus dressing that is very good… And their Asian kit is delish too, with it's almonds, crunchy wonton strips and orange sesame dressing (sometimes I mix up a peanut dressing for it). Sometimes I add some solid white tuna straight from the can for the protein, but meat dumplings/pot stickers are nice too, esp so b/c they can be heated in the microwave and are delicious (Pagoda is a good brand, it's in the freezer case)

    There is a Southwestern kit; and a Sunflower Crunch kit which has cabbage, kale, other greens and veggies, and a sweet onion dressing (It has bacon too, so def. not kosher, not sure if the others are certified kosher).

    I often dupe the kits in the summer and use my own ingreds. to make a copy cat version.

    This is getting long, (HA, no…it IS long) but one more thing: in the winter we enjoy a salad of baby spinach, walnuts, diced apple, dried cranberries, cheddar cheese and I make an apple cider vinagrette…roasted chicken is a nice protein with it. The nice thing about this salad is that most of the ingreds are staples or pantry items and all you need to pick up is the greens (or go to the garden) and an apple or two and a rotisserie chicken…the apple cider vinaigrette is a basic vinaigrette using apple cider vinegar and some sugar to balance the acid…I use a mild flavored oil too.

  2. I'm trying to concert down the salad but your little girls are so endearing and adorable I love how your oldest little one is trying to fix your hair I tell you having daughters is so much fun just wait until they get a little bit older you're going to every year it just gets more enjoyable
