Lobster Risotto

  1. just made it, pretty nice but too creamy for me. I should've been adding butter and mascarpone bit by bit, but instead I just added per instructions and it turned out to be way too much. Lemon zest is also not my thing, any idea for a substitute that's not so strong? Or just make it without it?

  2. I would love to make this but you didn't give measurements or detailed instructions. The link to the recipe goes to the lobster stock recipe. Could you fix it please? I've never even eaten risotto before but HK is what made me want to try it. Yours looks perfect.

  3. Your lobster risotto looks amazing! The only thing I won't do is substitute the mascarpone. I will use frozen lobster from the supermarket though and use not fully cooked but pre-cooked rice to cut down on some of that time. I like to be in and out of the kitchen to be honest. Did you use a specific brand of dry white wine? Does Hell's Kitchen use white wine straight out of an actual bottle of wine or that table cooking wine? I don't really care for table cooking wine.

  4. Will it turn out good if using a rice cooker? I have a good pot for rice but I've never made risotto. Never wanted to until after binged watched HK.

    Seafood risotto goes really well with grilled or roasted fish, especially mahi-mahi or grouper.
