Very easy to make. You can make this as a weeknight dish and the leftovers are yummy.

INGREDIENTS (you can cut this recipe in half if you do not want leftovers.)
6- TBS Regular Olive Oil
1 – 1.5 lbs of Shrimp (Peeled & Deveined)
1 (1 Cup) Onion (yellow – chopped finely)
4-6 Cloves Garlic – minced
½ Cup of White Wine (Dry)
2-4 TBSP Fresh Flat Leaf Parsley
2 – Large (28 oz) Cans San Marzano Tomatoes (crushed with your hand or a tool)
1-2 Tsp of Dried Oregano
1-2 Tsp of Dried Thyme
1-2 Tsp – Crushed Red Pepper (optional)
2 Tsp Salt (Kosher)
2 Tsp Coarsely Ground Black Pepper
8 oz of Feta Cheese (you will use 2 oz as a topping)
1 lb – Rigatoni (cook according to package)
Optional –
Pecorino Romano Cheese
