Stuffed peppers the Turkish way.
Ingredients
10-12 cubanelle peppers, whole and seeds removed
300g ground beef (lean or extra lean)
1/2 cup rice (I used Jasmine), rinsed well
1 medium tomatoes, diced small
1 medium onion, diced fine
1 tsp salt
1/2 tsp pepper
1 tsp red pepper flakes
3-4 tbsp tomato paste (1 tbsp for the filling, 2-3 tbsp for cooking)
4 tbsp olive oil (2 tbsp for the filling, 2 tbsp for cooking)
2 1/3 cups water (1/3 cup for the filling, 2 cups for cooking)
Directions
Add ground beef, rice, onions, tomatoes, salt, pepper, 1 tbsp tomato paste, 2 tbsp olive oil, and 1/3 cup water in a large bowl and mix well. Stuff the peppers with the beef mixture. Place all of the stuffed peppers in Instant Pot. Try to have the top sides of peppers up to prevent the filling from falling out as it cooks. Sprinkle some salt (to taste) and drizzle about 2-3 tbsp olive oil over the stuffed peppers. Add 2-3 tbsp tomato paste to a small bowl and gradually thin it out with about 2 cups of hot water. Slowly drizzle this tomato paste sauce on the peppers and into the filling of each pepper. Pour the rest all over the peppers. You should have about 1.5-2 inches of tomato paste sauce at the bottom of the pot. You do not need much liquid to cook these peppers as you are essentially going to steam them in a bit of liquid, and also the peppers will release their juices as they cook.

I doubt there's a stuffed pepper I wouldn't enjoy. Yum!
