  1. More silly questions ~ I find corn meal in store – but it doesn't say ' fine ' or ' course '
    So I bought Quaker and Indian Head ~ both seem the same grit.
    Then I also bought GOYA corn meal – it's quite a bit finer than the first two.
    I also saw Bob Red Mill MEDIUM ~ wish I'd bought that too for comparison.

  5. My family always made corn read by mixing a box of jiffy cornmeal with a can of creamed corn +egg. According to everyone I’ve ever met, this is not cornbread. But it is delicious.

  6. I'm a new viewer living in central Europe, but native english speaker – I do wonder, though, why contributors from the USA always have to speak so very, very fast. It's not like I can't follow, I just find it utterly exhausting! – Do you speak so fast in everyday life, or is this purely due to perceived demands of video editing?? I usually make mine with a can of creamed corn, diced fresh jalapenos and shredded cheese in the batter. brushing the top liberally with butter after it comes out of the oven and again about 5 minutes later as it sits on a cooling rack. Excellent side with chili (red or green) or anything else

  8. I had a recipe just like this as a kid. Sweet honey cornbread, I added buttermilk instead of milk, an extra 1/4. cup of water, and a crust of sugar baked on top. Best part of family gatherings.

  11. I'm originally from California and have lived in Texas for a long time and I must say, there is no such thing as bad cornbread. It is all delicious.

  12. My favourite spread for Yankee cornbread is Maple butter, the same recipe as honey butter, but replace the honey with 100% pure, Canadian Maple Syrup. Yes, I am Canadian to the core.

    1/2 teaspoon baking powder baking soda
    1 teaspoon kosher salt
    3 TBSP brown sugar
    2 eggs + splash of oat milk
    Butter
