Today we’re preparing my award winning Zucchini pasta with pesto sauce. The pesto is actually a mix of basil and mint, lending it a fresh garden flavor. The “pasta” is 100% zucchini, but you won’t even be able to tell the difference. This is also a perfect dish for all my Keto lovers out there.

Basil Mint Pesto
Makes about 1 cup

Ingredients:
1 cup of packed basil leaves
2 cups of packed mint leaves
2 garlic cloves, peeled and chopped
¼ cup toasted pine nuts
pinch of kosher salt
juice of half a lemon
½ cup extra virgin oil
½ cup grated parmigiano reggiano

Steps:
1- Toast the pine nuts for 1-2 minutes, or until golden brown and fragrant, over medium high heat.

2- Place the pine nuts, basil, mint, garlic, salt, and lemon juice in a food processor (or a blender). Pulse to chop ingredients, scraping down bowl as necessary.

3- With the food processor running, slowly add in the oil.

4- Scrape the bowl again and add parmigiano. Pulse again to combine cheese.

Zucchini Pasta
4 Servings

Ingredients:
4 to 6 large zucchini
big pinch of kosher salt
Olive oil

Steps:
1- Using a wide vegetable peeler, clean off all of the skin of the zucchini and discard.
2- Continue peeling along each side of the zucchini until reaching the seeds. Make sure to use some force to create a thinker ribbon.
3- Toss zucchini pasta with a bit of oil and a big pinch of salt.
4- Sauté the zucchini over medium in batches until softened, do not brown them and stir gently to avoid rips.
5- Serve with your favorite sauce and toppings.
