INGREDIENTS (5 SERVINGS)

33/35 g sea salt
1.5 kg of clams
Bottarga to taste
Parsley to taste
360 g pasta
Lemon zest to taste
White wine to taste
1 clove of garlic

The clams will have to drain for a few hours, if the water is very dirty, repeat the procedure.

Lightly fry the garlic, parsley and lemon zest, and add the clams. Raise the flame, blend with white wine and cover with a lid or pan upside down.

As the clams open, filter their water. A quarter of water will be used to keep the clams moist, the rest to finish cooking the pasta.

Once the pasta is al dente, finish it in a pan, a drizzle of oil, add the clams and scratch the bottarga on top. Enjoy your meal!
