Daddy Jack’s “Cooking with the Blues”, Recipe – Lobster Risotto. The American lobster is a big part of New England cuisine. Warmer weather is right around the corner and it wouldn’t be summer in Southeastern Connecticut without a little lobster on the menu. In this video, Jack shows you how to make a lobster risotto his way.
INGREDIENTS:
Lobster, rice, water, onion, chicken stock, butter, olive oil, salt & pepper, garlic, white wine, cream, green onion, Parmesan.

Nothing wrong with that Risotto Jack. I was taught by a great local Italian celebrity chef to make his signature Red Beet Risotto made with beetroot juice. The colour is amazing.

Only thing i can critique is that u didnt ladle the stock over slowly and in intervals, which would make a moister risotto, and ur cuts are far too coarse
I had Lobster Rossoto at Ramseys Vegas place mmmmmmmmmmmmmmmmm
in Italy the rice cooked this way (separate lobster) is called "pescà" not risotto, and we eat it when we're sick

I'm sure you know to get the meat out of the legs. You can squeeze the leg meat out with a rolling pin like you would a tube of tooth past.
