How To Make Moroccan Red Lentil Soup

1 brown onion, finely diced
1 celery stalk, finely sliced
1 carrot, sliced
2 sprigs fresh coriander, chopped
3 crushed garlic cloves
3 tbsp olive oil
8 cups chicken stock
1.5 cups red lentils
1 tsp salt
1/2 tsp black pepper
1/2 tsp turmeric
1 tsp curry powder
1 tsp dried thyme
1 tbsp lemon juice

Garnish with fresh parsley and paprika

    That is how we eat it in Morocco
