Aromatic Moroccan lentil soup – recipe + calories

For all those who have been to Morocco and for those who have not yet tried their famous lentil soup and would like to make the same at home. ☺

Lentils 100g

Tomato approx. 350 g
Luke 1
Parsley
Celery leaf
Garlic
Ground red sweet pepper
Turmeric
Ginger
cumin
Cinnamon
Anise
Olive oil
Water or chicken stock or vegetable stock

Soak the lentils in water overnight
Cut the tomatoes into quarters and grate so that the skin remains on the outside. Remove the skin.
Grate onion and garlic
In a saucepan add two tablespoons of olive oil, onion and garlic lightly simmer. Add chopped parsley and celery simmer for a minute.
Add a teaspoon of ground sweet paprika, turmeric, ginger, cumin, cinnamon and one anise.

fry the spices to combine and release a fine aroma.
Add tomatoes and lentils, pour over about 3 dl of chicken stock or water.
Cook for 15 minutes
Serve 🙂
