  2. Hi Grandma and Grandpa! I see your nicely sliced butter pads 😊. You know I never had corn beef nor Haggis (I definitely would not eat haggis simply because of what it’s made of) but one day I might sample corn beef but I am not sure about it. It must not have been something eaten down my family generations as I don’t ever remember anyone having it. Now I do remember however my mothers side would make a big deal about ham and cabbage ( they put potatoes in it also) but I never really cared for it and that’s saying something about me because I am not a picky eater. It always was after Easter because back then ham at Easter always seemed to come with a bone and they would boil it to get all the meat off to make it. But I just was not a fan of it.

  8. It's good how you managed to cube the potatoes, cook them and keep the potatoes solid without flaking et cetera. Would you recommend cooking the potatoes on a low heat with cubing them so small? Or did you cut them up after you boiled the potatoes? Thanks again Grandma. Looks absolutely delicious..

  13. This looks great! My wife used to make this for us and she would put the egg on top of the corned beef hash. That way, when you cut into the egg, the yolk runs down into the hash. Awesome! It is also delicious topped with a poached egg.

  17. That's my idea of good eating. Yum! My mom used to make corned beef hash, roast beef hash, and red flannel hash. Roast beef hash she made the same as your corned beef hash, except she'd usually add some leftover gravy. I think I liked it better than the roast beef dinner. Red flannel hash is just corned beef hash with diced cooked beets added.

    As much as I love corned beef and cabbage, I also love corned beef hash made from the leftovers. And Reuben sandwiches. I need lots of leftovers! 😄

Everybody in our family loves corned beef hash, but we have always bought it at the grocery store because we never have enough corned beef left over from a dinner- we maybe get one leftover sandwich. When I say “we”, I mean hubby, who loves a corned beef sandwich! Next time I buy a corned beef, I’m gonna buy a larger one to make this fantastic breakfast from homemade corned beef hash

    I fixed this for my wife before we left this morning. I cheated though and bought corn beef hash in a can and added peppers and onions with 2 fried eggs. It was still very good!
