Branzino (plural, branzini) may be one of the best whole fish for grilling. Once stuffed with lemon and your favorite herbs, it will fall apart and melt in your mouth. Branzini is a silver-skinned fish that goes by many names including European sea bass, spigola, loup de mer, branzino and lubina. It has a medium-textured, delicate-flavored flesh and few small bones. I love it because it’s hard to mess up when cooking on the grill and really doesn’t need much time to cook. I bought these at whole foods where they clean and de-scale the fish just before you buy them. I just needed to salt and pepper, then stuff with lemon, salt, pepper, olive oil, fresh parsley, oregano and any other herbs you like. I grilled at 450 F for about 8 – 10 minutes each side.
