Hola Familia!! As we observe Good Friday, there are many of us who prefer to eat some sort of Fish versus meat or poultry. I thought I’d re-post a Grilled Branzino that I picked up from @freshfloridafisheries Check out their vast selection and menu items!! This place is amazing! I paired this beautiful Branzino with grilled potatoes and Asparagus. This meal can serve about 2-4 people easily.

You can use a charcoal grill, smoker or gas grill. Just keep in mind that the smoking process is an arduous, but not impossible, task and needs a lot of attention.
I always say the slower, the better.
It all depends on your preference, charcoal is always the way to go in my house. But if in a hurry, you can always use your gas grill or home oven.
For your oven, make sure to pre-heat to 400 degrees Fahrenheit. The fish should be ready in approx 30-40 mins.

I picked up a whole Branzino from my local Fish Market. This is a white fish, super tender and flaky. The white flesh is delicate and resembles that of shellfish, which is the majority of their diet. They also are found in cold waters in the Europe’s Western and Southern Coasts.

Here I prepped it with salt, pepper, 2 tbsp of butter, a couple sprigs of Thyme and red onion and stuffed it inside the open cavity.
I used my Chef Knife to score the skin on the outside and drizzled it generously with Olive Oil to keep the fish tender and protect it from burning in the grill.
Rather than place it directly on the grill, I used aluminum tin foil to create a barrier between the hot coals and the fish.

I did the same for the potatoes and Asparagus. I kept a close eye on the fish to make sure it wouldn’t burn, no need to flip it as long as the Charcoal grill is covered, it will cook from the bottom up. Depending on how hot you have your grill- between 350 to 450, it should take about 10-15 mins give or take.

You can move it off to the side, instead of placing it on the direct heat of the charcoal which will prevent it from burning- keep an eye on your charcoal that it doesn’t burn out as you want to keep your grill above 350 degrees!
