This is a Thai-style Chicken Satay complete with an Indonesian peanut sauce to finish it off. The perfect summer recipe for the grill if you ask me.

Chicken Marinade: 1 1/2 lbs of boneless chicken thighs makes 12 skewers
1/2 cup avocado oil (any other neutral oil is fine)
1 oz fresh lemon grass (1 large stick of lemongrass)
8 cloves of fresh garlic
1/2 cup fish sauce
1 1/2 tbsp curry powder
4 kefir lime leaves (sub with the zest of 1 lime)
1/4 cup lime juice

Indonesian style peanut sauce:
2 tbsp avocado oil
1 large or 2 medium shallots small dice
5 garlic cloves small dice
1 1/2 Fresno chilis small diced
1 1/2 cups coconut milk
3/4 cups peanut butter (crunchy)
2 tbsp dark soy sauce
2 tbsp sweet soy sauce or kecap manis (sub with regular soy sauce)
2 tbsp lime juice

I made that satay sauce and when I do it just oil keeps building up on the surface as I cook it and it looks way too dark. literally didnt sub a single ingredient, but when I put the stick blender in it turns much lighter and incorporates the oil. the blending isnt optional as far as I can see. I blend it all and if I want cruch I add some crushed peanuts after instead, or it just ends up oily

    it rocks so much though, do the sauce.

  3. Everything looked so good, until you put the skewers on a smoker 😭 like you said a grill with charcoal or at least direct heat would be perfect and elevate this dish on another level. No colour no flavour… Unfortunately you missed 20-30% of the potential of this dish…

    It was good, but way too much fish sauce in the marinade. It made it overly salty.

  5. watch your videos periodically, but after this video I am a true fan! Born in Holland but raised in BC Canada. I can't get enough of Satay met pinda sauce, along with Bami or Nasi…. my mouth waters. Gonna make your version/recipe now.

  7. I just made it! And no you should not try it! It's the nastiest saltiest fishy thing ever. Threw away the meal after tasting… just don't do it. Dude….. you can do better
