  7. The reason they are called Red Onions is because they were used to make dye in red shades. I read somewhere that if you grill/bake avocados it will limit the oxygenation/turn it brown. Do you find that to be true?

  9. I've been using a potato ricer to mash most of the avocado the small dice one of the more firm ones to add the texture.

  10. Love your ideas! Unfortunately, I am pretty sure the habanero is gonna be too much for me, however, I have always wanted to become acquainted with the flavor essence of habanero. So, I just have to get brave. Also, I am one of those people who have that genetic issue with cilantro. Lord knows I have tried to like it. But, I am okay with coriander seed powder, go figure. What I really want to share with you though is this. Consider trying to zest your lime before you juice it into your mixture. The zest of one lime will bring on the lime flavor in a most amazing way! Have you done Birria tacos?
