Time for another little cooking video – here I’m making another of our favourite courgette dishes ( a risotto) its beautiful creamy texture is divine.

  3. Okay, I had to google "courgette". Zucchini got it! 45 mph wind can do some damage! This looks and sounds really yummy! Thanks for sharing this great recipe. Beautiful rainbow! Go for the gold!!! I gotta go find something to eat now. LOL

  4. In our family we have had a lot of disagreement about 'risotto', my wife is rather of your persuasion, and it does taste wonderful. On my side I was taught in Italy to keep stirring the rice and add the broth as the mixture becomes 'creamy'. Recently we resolved this issue of 'different perspectives' by making risotto in a pressure cooker (old style – non electric). In short, it works. Pre fry all the veg, and the rice, (as you do), then pile in all the stock, shut the lid and pressure cook for 15 minutes. Open the lid, let it cool for a minute or so and then stir in the grated cheese. It is ready to serve. It is wonderful, and avoids 'undercooked' rice (my wife's way), and standing at the stove for the entire cooking time (20-30 minutes) (my way). But what ever, that looks absolutely wonderful, and for sure we will now throw more veg in our risottos!
