Smoked chicken salad is one of my favorite, most versatile things to make and eat. Try this one out. It’s also a fairly healthy recipe as well.

2-1/2# boneless skinless chicken breasts
2-1/2# boneless skinless chicken thighs

1-1/2c mayonnaise
4 sliced stalks of green onion tops
1/2tbs Cajunland Creole Seasoning
1/2tbs onion powder
1/2tbs garlic powder
1/2tbs black pepper
1/2tbs crushed red pepper flakes
4 diced hard boiled eggs
Kaiser buns or your favorite sandwich bread

Set up smoker for 275-300*. Season the chicken with the bbq rub, and place on the smoker with some cherry wood. While the chicken is smoking. Make the dressing with the remaining ingredients, except for the bread, and mix well. Place the mixed dressing in the refrigerator for an hour to help the flavors develop. When the chicken reaches an internal temperature of 160*, remove from the smoker, chop into very small pieces, and place in the refrigerator to cool off. Remove the dressing, and chicken from the refrigerator, and mix together. Now enjoy it by itself, on a sandwich, a salad, or maybe some crackers.
