Recipe –

175g plain flour
3 tbsp light brown sugar
3/4 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp grated nutmeg
pinch of ground cloves
2 tsp baking powder
generous pinch of salt
160g pumpkin puree
230ml whole milk
2 tbsp melted butter
1 lg free range egg

Topping 1
150ml double cream
75ml greek yoghurt
2 tbsp icing sugar
maple syrup

Topping 2

200g caster sugar
75g unsalted butter
30ml greek yoghurt
90ml whole milk
1 tbsp golden syrup
pinch salt
3/4 tsp bicarbonate of soda

  12. I could not thank you enough for the caramel sauce recipe, in my country it is extremely hard to find heavy cream and it took me long time to search for a recipe that didn't include it, I made it and it was totally awesome!

  14. Hi Jemma, well I am still behind the times but very happy to have found this Pumpkin Pancake Recipe! I normally don’t do much with Pumpkin because my daughter is allergic to it and Squash items. However, at my age of 57 if I don’t start doing things for myself now, I never will and just have lots of regrets.
    I have been wondering for some time now that you call you Cooktop a “HOB” or something like that. Can you please tell me what that stands for? I keep thinking it is heat of burner but not sure if you said HOB or HOV or HOP. Please don’t make me wait any longer. Silly things like this drive me crazy very fast. I love watching your videos and can’t wait to try this recipe for the Caramel sauce which leads me to another question. How long will it last in refrigerator safely? Is this possible to be processed and canned to stabilize for Future Use? I love to can foods and do it a lot. It would be nice to make these as gifts for Christmas and Birthdays.   15. So much animal cruelty. You don’t need any animal products to make pancakes and you should really do some research on the cruelty behind “free range” eggs because that’s just a marketing label. -_-
