Claire Saffitz Makes Chocolate Chip Cookies | Dessert Person
What makes the best chocolate chip cookies? In Claire’s opinion, it’s a chewy edge, soft and chewy center, puddles of chocolate (in this case, dark and milk), a healthy amount of salt, and, crucially, lots of butterscotch-y flavor from the interplay of vanilla, brown sugar, and brown butter. That might sound like a lot, but it all comes together easily in a couple of bowls, no stand mixer required. The hardest part is definitely waiting for the dough to chill in the fridge before baking.

Chocolate Chip Cookies
2 sticks unsalted butter (8 oz / 227g), cut into tablespoons
2 tablespoons heavy cream, half-and-half, or whole milk (1 oz / 28g)
2 cups all-purpose flour (9.2 oz / 260g)
2 teaspoons Diamond Crystal kosher salt (0.22 oz / 6g)
1 teaspoon baking soda (0.21 oz / 6g)
3/4 cup packed dark brown sugar (5.3 oz / 150g)
3/4 cup granulated sugar (5.3 oz / 150g)
2 large eggs (3.5 oz / 100g), cold from the refrigerator
1 tablespoon vanilla extract
5 ounces (142g) bittersweet chocolate disks, half coarsely chopped
5 ounces (142g) milk chocolate disks, half coarsely chopped

  1. Is there a recipe for these? Just need to have it in writing. I got most of it from the video but didn't catch how much butter and what salt was one teaspoon where the diamond salt was 2 I think.

  2. I don't know if you still read comments for a video posted so long ago but I LOVE these cookies. I have baked them 3 times in the past 3 weeks BUT ,all three times, the cookies have come out flatter than a pancake. No "pillows of chocolate" because the cookies are flatter than the feves. I've followed the recipe to the letter. What am I doing wrong? It's also rained almost every day for the past month and I'm living in an uninsulated cabin where one feels the humidity almost as much inside as out. Could the humidity be doing this? If so, is there a solution? Thanks for your time.

    The minor adjustment I did was- Instead of cream i used whole milk and my batter was a bit runny so I added a bit extra flour! It's perfect!

  6. So I tested it!!! (Mostly because I’m impatient) I put half the cookie dough in the fridge and half straight into the oven. The cookies without the chilling didn’t have as much flavor and the weren’t as chewy in the center… that’s only difference I can tell, but they were both still very delicious😅

  10. Okay pro tip if you're making this during summer time and you wanna cool the butter mixture real fast, sprinkle some salt on your ice. Wanted to share that cuz it helped me out a whole lot!

  13. i just made these and they turned out amazing! i was trying to find a good cookie base to make black sesame chocolate cookies and these turned out perfect. the only mistake i made was accidentally burning a small batch of four :’)

    if you guys want a chocolate chip cookie with a sesame-y twist, just add 1/2 cup of black sesame powder to the dry mix. it gives the cookie a bit of a nuttier flavor that is well complimented to the saltiness!

  14. I made these but I also stuffed them with Nutella. I rested the cookie dough for 48 hours before I baked them. They were one of the best chocolate chip cookies I’ve ever had. They’re absolutely delicious. I love the combination of the milk and dark chocolate. The Nutella was a nice addition as well but not necessary
