  2. Any recipe of not marinading them in vinegar, but lacto-fermenting them? I mean, 1) brining to get the bitterness out 2) fermenting ? Mane, I love Greece, i have been to Nikiti (Νικήτη) and Crete.

  3. Or, is there no need to put a slit because you are leaving them in for 4-6 weeks. No switching out the water either?

  5. Bruh you should store your olives in glass jars. How dare you mix those beautiful organic olives with shiticide plastic made from petroleum. Your olives will absorb toxins from plastics especially when you use cheap plastic bottles.

  6. yasou Ken…i just received olive and oil from my place overseas but they didnt season the olives with the lemon and spices…do you know the spices and things required to do this? im from the same area as you so im sure the seqasoning in Kalamata are all similar, thanks man

  7. Super video, our Kalamata olive trees (in Heraklion, Crete) are three years old & we'll be harvesting the olives for the first time. I didn't know this process was so simple. Thank you.

  8. They are red, and they are not the most popular. Black olives and green olives are more popular than kalamata. Kalamata do taste the best.

  9. I'm an oddball because I love kalamatas but I hate a regalur green or black olives. Kalamata is where the flavor is 😎 I loved this video mate!
