Preparation

  1. Preheat the oven to 425 degrees.
  2. Remove the skin from the ham, if necessary, leaving at least a one-half-inch-thick layer of fat around it. Score the ham, place it in a large baking pan and pour the vinegar over it. Combine half of the ground cloves, all the nutmeg and pepper and rub all over the ham.
  3. Bake for 30 minutes. Lower the temperature to 325 degrees and bake for three and one-half hours.
  4. Meanwhile, in a small bowl, combine the brown sugar, mace, mustard, orange juice and remaining ground cloves. After the baking is finished, turn off the oven and brush the ham with the mixture. Return the ham to the turned-off oven for 30 minutes.
