200g MAYO, 175 for salad, 25 for spreading on bun
BASIC MAYO (1 yolk, 4g salt, 20g White vinegar, 200g Oil)
30g or 2 TBSP chopped rinse RED ONION
70g or 3 TBSP GRAIN MUSTARD
85g BREAD AND BUTTER PICKLE
40g LEMON or JUICE OF 1.5
4g or 2 sprigs TARRAGON
15g or 1/2 BUNCH PARSLEY

FOR THE POTATO BUN
600g or 3 3/4 C. AP FLOUR
210g or 1 1/4C. WATER
6g or 1.5 TSP YEAST
70g or 3 TBSP SUGAR
30g or 4 TBSP BUTTER
100g or 2 TBPS COOKED POTATO
1 EGG
10g or 1.5 TSP SALT

  1. Your recipes continue to f***ing nail it. I used leftover grocery store rotisserie chicken and it turned out amazing. Baby-faced Bri from the past came through!

There are very significant discrepancies between your metric and US measurements for the potato buns. e.g. 3 3/4 AP flour is 480g (according to the internet and my Escali scale) and 4T butter is 56 g ( according to the internet and my Escali). Because of these differences it might be a good idea for you to correct these discrepancies rather than confuse your readers, like I was.

  11. The company went under during COVID, but Pilgrim's Pride made the best Southern style chicken salad ever. It had the acidity needed and wasn't just mayo. It had pickle relish, celery, and mayo (along with other stuff) and it just worked. It was the perfect balance. I haven't came close to finding anything store bought as good as it. I'd KILL to find a recipe online and make it myself. They used to sell it at Kroger's. It was expensive, like $8 a pint, but so worth it.

  13. The thing about making everything from scratch for hours is that I am going to chow down the sandwich in under 2 minutes.

  14. I get a Costco chicken, pick all the meat off, make this recipe, freeze the bones, then a few batches later make chicken stock from the bones. Nothing wasted, everything tasty. I use low carb tortillas and make chicken salad wraps so it keeps my blood sugar in check.

  15. I think thereโ€™s a problem with the cups/grams conversion for the water. 1 cup of water weighs 240g, so thereโ€™s no way 1.5 weighs just 210.

  17. Sweet pickles don't belong in a chicken salad sandwich, you are making tartar sauce. The simplest chicken salad sandwich is superior to these gross tartar sauce chicken sandwiches. Onion. celery, fresh dill, and a normal amount of mayo, salt and pepper. Not like this tartar sauce chicken sandwich.

  19. A sandwich never seemed so simple! I can't wait to try this recipe on Saturday when I will have four hours to prepare it. This SANDWICH is going to taste so good!
