I’m Despina and I show you how to make Koulouri (Cypriot Village Bread).

The following recipe makes approximately 20 loaves! You can adjust the amounts, or the sizes or shapes of the loaves, according to your own needs.

You will need the following…

Dry ingredients:
– 3kg (6.5 lb) plain flour, preferably unbleached
– 0.5 cup of sugar
– 1.5 teaspoons of salt
– 10 teaspoons of dry yeast

Plus 5 tablespoons of a spice mix containing:
– 1.5 teaspoons of mastic (or Arabic Gum, not Gum Arabic!) finely ground with a morter and pestle
– 6 cloves, finely ground
– 4 teaspoons of anise seeds, finely ground
– 1.5 teaspoons of cinnamon, finely ground

You’ll also need:
– 2L (68 fl oz) of milk, luke warm (you can replace a cup or so with cream)
– 2 cups of vegetable oil or peanut oil
– 3 cups sesame seeds, blanched and drained

    Can't wait to try it out.
    Why do you add the oil after you made the dough.
    To make it easier can I add the oil to the flour.

  2. It would be far better to show us an amount where any amateur can try. Who would try with such amount of flour!,! This is industrial.

  3. mmm this looks so yummy, I love the typical koulouri rings!!!! Best breakfast food together with some nice fruit and coffee!
