This is a very popular dish in Morocco, usually prepared as a side dish of main dishes such as tajines or fish but can be also used as a spread or as a starter and eaten with some bread.

Ingredients:
1 big aubergine (around 400gr)
2 small bell peppers (you can replace with another aubergine)
2 cloves of garlic
2 tomatoes
2 tbsp of tomato paste
Coriander/parsley to garnish
1/3 cup of extra virgin olive oil
Salt
1/4 tsp pepper
1/4 tsp chilli powder
1/2 tsp paprika
1/2 tsp coriander
1/2 tsp ground cumin
