This cranberry vinaigrette over a spring mix salad should be called the kitchen sink. It has candied walnuts, feta cheese, carrots, avocado, chicken, celery, tomato, bell pepper, raspberries, pear and more. It’s so healthy and delicious!

This beautiful salad is not only delicious, it’s healthy too. You just gotta try it. This is a complete meal!

Cranberry vinaigrette
Ingredients:
1/4 cup fresh or frozen cranberries
1/2 cup water
1/3 cup olive oil
2 Tbsp plus 1 tsp. balsamic vinegar
2 – 3 leaves of fresh basil
1/4 tsp. garlic powder
pinch of salt and pepper
1 tsp. sugar
2 Tbsp. water to thin the dressing out.

Directions:
Place the cranberries, 1/2 cup of water and sugar to a sauce pan and heat over medium heat. Stir and cook until the cranberries pop, and break down. Once the sauce thickens a bit after about 3 to 4 minutes, remove from heat and let it completely cool.

Place the olive oil, vinegar, garlic powder, pinch of salt and pepper, basil, cranberries, add a couple of tablespoons of water. Blend until smooth.

Now let’s put the salad together. You can use any ingredients you like but here’s what I used:

feta cheese
diced red bell pepper
organic raspberries
shredded carrots
diced celery
1 pear, peeled and cut into chunks
left over, cooked chicken cut into bite size pieces
diced tomato
cubed avocado
spring mix lettuce

Mix all ingredients into a big bowl. Add the avocado, walnuts and raspberries and feta cheese at the end. Toss well and enjoy!

  1. Now I'm hungry and I'm out of cranberries, used them all up making cranberry sauce. Have to hunt some down tomorrow. Raspberries aren't in season around here, But I guess I can skip them and it still will be good. Have to skip the walnuts as well as I can't stand them, But I suppose pine nuts will do instead.

    I wonder if it would work to make candied pine nuts… have to try that.
