Yield: 8 to 10 servings
Ingredients
9 cups water
1 tablespoon salt, plus extra for seasoning
2 1/2 cups yellow cornmeal or polenta
1 1/2 cups freshly grated Parmesan
1 1/2 cups whole milk, at room temperature
10 tablespoons (1 1/4 sticks) unsalted butter, at room temperature, cut into 1/2-inch pieces
1/3 cup chopped fresh flat-leaf parsley
Freshly ground black pepper
Directions
Bring the water to a boil in a large, heavy pot. Add the salt. Gradually whisk in the cornmeal. Reduce the heat to low and cook, stirring often, until the mixture thickens and the cornmeal is tender, 15 to 20 minutes. Remove the pot from the heat. Add the cheese, milk, butter, and parsley. Stir until the butter and cheese have melted. Season with salt and pepper, to taste. Transfer the polenta to a bowl and serve.

My mom made a similar dish called mamaleega (sp?). Polenta and you add mozzarella. No milk,butter, or parsley. Hungarian dish
Nice recipe young lady, we have a very similar recipe from rural Kentucky, but we use yellow stone ground corn called "grits" they are very similar to polenta. The best one i make is the same recipe as your's, but made with yellow popcorn grits, just has a slight taste of popcorn, but you don't pop the kernels, it is the same corn used for popcorn though. btw, you can put the recipe in the fridge overnight in a square baking dish , the size of the dish should allow to pour in the grits to have 1/2 to 3/4 inch thickness, the grits will set, then cut squares & fry in butter or olive oil, etc…
Am I crazy or she is insane?! My grandmother uses a similar recipe as a chicken feed. Ofc, minus the cheese butter, and parsley but add chopped green leaves.
