Massimo Bottura, the Italian restaurateur and chef-owner of three-Michelin-starred Osteria Francescana, knows a thing or two about homemade pesto. His restaurant just won #1 in the world on the prestigious Top 50 list.
Using a recipe from his cookbook, Bread Is Gold, Bottura loses the traditional pine nuts and uses breadcrumbs instead. The final product is a fresh and original pesto pasta dish from one of the best chefs in the world that’s still simple enough to make at home.

A cook finely prepares legacy food, a chef innovate
You've gotta remember this guy got his stars from his restaurant and that style of dishes, which translates through his cooking, someone like Stefano Secchi got his from pasta…
As an aside, I can't help but notice/wonder what influence social media has had on michelin over the years…
Add ice in blender to prevent oxidization
This is simply an amazing dish.

It's so good that the guy at 3:16 threw his head back in joy before he even tasted it!
What herb is he referring to when he says “Krishona”?
Idk about the spelling but that what the captions spelled it as.
Munchies listed parsley in the recipe…..?
Holaa

That was nice, i also recommend the Somebody Feed Phill epoisode (netflix, S2:E1), features Massimo Bottura, making Phil Rosenthal almost have an orgasm with a dish with Parmeggiano Reg. crafted in a dozen of ways. It's inspiring and hilarious
I prefer to avoid comments, just invite Mr Bottura to partecipate to pesto world challenge in Genoa
I use Heinz ketchup, Carrots and Paprika in my Pesto
