I love seafood! Specially, during the summertime. This is how I made my shrimp cocktail also known as a Campechana. This is a perfect dish for you to share with your family and friends through the hot summer day next to the pool or the river and you can also have them all help and you’ll be done in no time.

Broth:
Shrimp shells of 1lb shrimp
1/2 onion
1 garlic head
2 bay leaves
Salt
Chicken bullion
Clam juice
Clamato
Ketchup

You can also make your broth in advance and freeze it!  pull it out when you’re ready to use.

I like to have a mixture of textures, so I cooked half a pound of shrimp in lemon juice seasoned with salt and pepper, but that is optional. 

1lb shrimp
1lb octopus
Or whatever seafood you like

Veggies:
Diced tomato
Onion
Cilantro
Cucumber
Jalapeño
Avocado

  4. A mess, too many add on ingredients to personal taste. If you don't like cilantro or cucumber you are not eating this dish

  5. Unfortunately I’m the only one that eats this, what can do with left overs can make soup? I’m about to experiment 😂
