Ingredients:
For the salad:
1 cup (170g) Instant couscous
1 cup (240ml) Hot water
1/2 teaspoon Salt
1/2 teaspoon Cumin
1 Red onion, chopped
200g Cherry tomatoes, quartered
1 Cucumber, diced
1 Bell pepper, diced
1 can (300g) Chickpeas, drained
1/3 cups (g) Olives
1/4 bunch Mint, chopped
For the dressing:
3 tablespoons Olive oil
2 tablespoons Lemon juice
Salt to taste
Pepper to taste

Directions:
1. In a large bowl, mix couscous, salt and cumin. Add hot water, cover and set aside for preparing the vegetables.
2. Before adding the vegetables fluff the couscous with a fork.
3. Add chopped onion, cherry tomatoes, cucumber, bell pepper, chickpeas, olives and chopped mint.
4. Make the dressing: in a small bowl whisk olive oil, lemon juice, salt and pepper.
5. Pour over the salad and mix until well combined.
6. Serve!

    Why not try Fried egg plants ? It's so easy and so delicious

    Ingredients:
    3 big Round egg plants cut in to round slices
    Some salt and red chili powder mixed and sprinkle over eggplant slices both side . Set aside

    Gram flour 1 cup
    Salt to taste
    Red chili 1 tsp
    Coriander powder 1 tsp
    Origgano 1/2 tsp

    Mix all together and make a semi thick better with using water to dip the eggplant slices

    Heat some oil in a deep pan for deep frying.
    Now dip each slice in better and fry on medium flame , both sides until golden remove from oil and leave on absorbing paper to remove extra oil.

    Ready to serve enjoy with green dip or katchup.

    1/4 manojo de menta picada

    2 cucharadas de jugo de limón
    3 cucharadas de aceite de oliva
    Sal al gusto
    Pimienta al gusto

    Direcciones:
    0:43 1. En un tazón grande, mezcle el cuscús, la sal y el comino. Agregue agua caliente, tape y reserve por 5 minutos hasta que el líquido sea absorbido. Preparar las verduras.
    1:08 2. Antes de añadir las verduras, esponje el cuscús con un tenedor.
    1:31 3. Agregue la cebolla picada, los tomates cherry, el pepino, el pimiento morrón, los garbanzos, las aceitunas y la menta picada.
    2:36 4. Preparar el aderezo: en un bol pequeño batir el aceite de oliva, el zumo de limón, la sal y la pimienta.
    2:59 5. Vierta sobre la ensalada y mezcle hasta que esté bien combinado.
    6. ¡Sirva!
