  1. You made a red mole gracy style sauce not a enchilada sauce, it's a shame because tral enchilada sauce is ten times easier than what you did.

    Basically overcomplicated the reason for some strange reason, usually you nail everything and make things simpler not this time.

Although I love enchiladas and have always wondered if scratch sauce is worth the effort over canned… it never occurred to me to make a sauce with ground spices instead of starting with dried chilies.   9. I learned how to make red enchiladas, and green enchiladas when I lived in Mexico, and it just amazes me what people make, or buy and call it "enchilada sauce". That is definitely NOT the way I learned it from the indigenous ladies in Mexico. But then again, they use almost all fresh ingredients, no tomato paste, and no flour. They use things like dried chiles, fresh tomatos and onions and garlic etc…and cooked for a good long while. I suppose this works though. I'll have to try it and see how it tastes compared to what I learned.

  11. You are suppose to used a Green Chili Verde Sauce for Chicken Enchiladas ! The Red Sauce is for BEEF Enchiladas !! Flour Tortillas for Chicken Enchiladas and Corn Tortillas, white or yellow for BEEF Enchiladas !!!

  13. Just made this for dinner and my partner and I loved it. Here’s a tip: add a little bit of vinegar and garlic powder to the enchilada sauce. We think it elevates it to the next level.

  14. Cast iron is reactive and shouldn’t have any tomatoe product in it. I wish that wasn’t the case. Maybe stainless steel?
